Chocolate Shakeology Peanut Butter Cup

Recipe type: Dessert
A healthy alternative to Reese’s peanut butter cups!

Ingredients
4 tbsp Chocolate Shakeology
2 tbsp unrefined organic coconut oil
4 tbsp chocolate PB2
2 tbsp water
3 mini cupcake foils


Instructions
In a small microwavable bowl, add 2 tbsp coconut oil. Microwave for about 35 seconds.
Add in the Chocolate Shakeology and stir until mixed.
In a separate bowl add the PB2 plus a little water, and stir (if too thin, add a little more PB2).
In the cupcake foils, spoon about 1 tsp chocolate shakeology mixture, to cover the bottom of the foils.
Next add about 1 tsp of the PB2 mixture. To that, coat the tops with another layer of the Chocolate Shakeology.
Pop in the freezer for about 5-10 minutes.

    WHAT?!?!  I am having this for DINNER!! Wahahaha!

    As my current project involves meal planning I thought I’d share- nice! :)  These would be great for on-the-go folks and well, just about everyone! (Besides those who don’t eat dairy, eggs or processed grains…) I wonder if I could find a whole grain muffin…
back-to-the-old-me:

A week of breakfast sandwiches! Microwave-and-go.
370 calories | 30g carbs | 30g protein | 14g fat
1. Spray muffin tin. (I used a muffin-top tin and it worked perfectly.)
2. Crack eggs into tin.
3. Break up the yolk with a knife or fork. (Optional.)
4. Bake at 350*F for 25-30 minutes.
5. Place slices of cheese (I used sharp cheddar) on whole wheat English muffins. (Or bread of your choice.)
6. Assemble! Place the eggs on top of each slice of cheese. Place sausage patties on top of the eggs. (I used MorningStar Farms vegetarian sausage patties - they’re 80 calories each. Other good options would be turkey sausage patties or Canadian bacon slices.)
7. Complete! Wrap them in foil, parchment paper, wax paper, whatever you like!
8. There they are in my freezer :D Each morning, unwrap one and microwave it on medium for about 3 minutes, flipping it over halfway through.

This is terrible. :( Okay, so maybe I’m the Anti-Pharmacist but let me say a couple of things… Drugs are NOT Benign. If I have learned anything the past 4 years is that every drug has both BENEFIT and RISK. I have seen adverse effects and they are not pretty (destroyed kidneys, dangerous anemias, life-threatening diarrheal disease…) I have also seen lives SAVED by medications. The thing is.. the majority of illness can be managed/reversed/PREVENTED with proper nutrition, exercise and belief in yourself! Our bodies are amazing- they are designed to heal (heard of the immune system??) and given the proper tools your body CAN fight these things w/o drugs. I am NOT telling you to stop taking your medications! If you have a health condition such as hypertension/ high cholesterol you NEED to take your meds UNTIL you can get it under control through lifestyle. Are YOU ready to get OFF your meds? Take control of your life and PREVENT disease? Message me!! Oh Pharm peeps… don’t hate me! lol

    This sounds like a fantastic idea :)  Will have to try it!!  I wonder if I can use some cupcake wrappers or parchment to prevent it from sticking to the mug…

Berrylicious Microwave Minute Muffin 
Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some brown sugar or Stevia if you like things sweet, and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it.
Then place in the microwave for 1 min. Watch it carefully! This could overflow!
If the muffin top does not look firm, place back in 30 sec at a time.
Once ready, flip mug upside down onto a plate and slice some fresh strawberries to decorate.

Can’t wait to try this!

    This sounds like a fantastic idea :)  Will have to try it!!  I wonder if I can use some cupcake wrappers or parchment to prevent it from sticking to the mug…

    I did NOT eat the Skittles!  I was tempted… I will not lie… I tried to convince myself that I could justify the 240 calories… or that maybe I wouldn’t eat the whole bag (yeah, right!) But, I didn’t do it!  
Veggie wrap for breakfast, Salad for lunch, Shakeology for dinner.  A little concerned about the after-dinner snacking… popcorn, a bag of frozen veggies, a piece of chocolate, a banana… WHY?  I shouldn’t be hungry. :(  Oh… maybe it’s that water thing… crap.
Missed my workout today. :(  No excuse, really.  I will wake up early in the AM & get it done!  Some weeks are just not perfect…  Small victories (Skittles) and defeats (missed workout).  Back & Forth… at least I didn’t miss my workout AND eat the skittles! :)
